Butternut squash soup...

Tonight's supper is.....

...homemade, spicy butternut squash soup.


1 organic butternut squash
2 medium sized carrots
1 medium white onion
1 large white potato
3 cloves garlic (because i love it!)
1 organic vegetable stock cube
1 tsp ground cumin
1 tsp ground coriander
Pinch of cayenne chilli pepper
Pinch of salt and pepper to taste

To make...Chop all the vegetables into chunks and put into a large pan along with the garlic.
Add water to just cover the vegetables
bring to the boil then add the stock cube and stir gently
Simmer until all the vegetables are soft to mash (water should have evaporated a little)
Blend vegetables until smooth then add the spices and seasoning

Serve and enjoy in your favourite dish or mug with a lovely wedge of bread. Happy soup sipping folks!
